Spanakopita
Flaky phyllo layered with creamy spinach-feta filling — Greek pastry comfort food.
Instructions
Preheat the Oven
Preheat your oven to 375°F (190°C).
Sauté the Aromatics
Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Add the diced yellow onion and cook, stirring occasionally, until softened, about 4 minutes.
Add the minced garlic and sliced green onions and cook for 1 more minute.
Wilt the Spinach
Add the chopped spinach to the skillet in large handfuls, stirring between each addition.
Cook until all the spinach is wilted and most of the liquid has evaporated, about 5 minutes.
Transfer the spinach mixture to a colander and press firmly with the back of a spoon to remove as much liquid as possible.
Let the spinach mixture cool for 10 minutes.
Make the Filling
In a large mixing bowl, combine the crumbled feta, ricotta, and beaten eggs.
Add the chopped dill, parsley, nutmeg, black pepper, and salt to the bowl.
Add the cooled spinach mixture and stir everything together until well combined.
Prepare the Baking Dish
Brush the bottom and sides of a 9x13-inch baking dish generously with olive oil.
Lay one sheet of phyllo dough in the baking dish, letting any excess hang over the edges.
Brush the phyllo sheet lightly with olive oil.
Repeat layering and brushing with olive oil until you have 8 phyllo sheets on the bottom.
Add the Filling
Spread the spinach and feta filling evenly over the layered phyllo in the baking dish.
Top with Phyllo
Lay one phyllo sheet over the filling and brush with olive oil.
Repeat layering and brushing until you have 8 more phyllo sheets on top.
Fold any overhanging phyllo edges up and over the top, pressing gently to seal.
Brush the entire top surface generously with olive oil.
Score the Top
Using a sharp knife, score the top layers of phyllo into 8 rectangles, cutting only halfway through the pie.
Bake
Place the baking dish on the center rack of the preheated oven.
Bake for 40 to 45 minutes, until the top is deeply golden and crispy.
Rest and Serve
Remove from the oven and let rest for 10 minutes before cutting along the scored lines and serving.
