Greek Yogurt Parfait with Granola and Berries
Layered honey-sweetened Greek yogurt with crunchy granola and fresh seasonal berries.
Instructions
Preheat the Oven
Preheat your oven to 325°F (160°C).
Make the Granola Mixture
In a medium bowl, combine the rolled oats, sliced almonds, cinnamon, and sea salt.
Drizzle 2 tablespoons of honey and the olive oil over the oat mixture.
Stir thoroughly until all the oats and almonds are evenly coated.
Bake the Granola
Spread the granola mixture in an even, thin layer on the lined baking sheet.
Bake for 18 to 20 minutes, stirring once halfway through, until golden and fragrant.
Remove the baking sheet from the oven and let the granola cool completely — it will crisp up as it cools.
Season the Yogurt
In a medium bowl, combine the Greek yogurt, remaining 1 tablespoon of honey, lemon zest, and vanilla extract.
Stir gently until fully blended and smooth.
Combine the Berries
In a separate small bowl, gently toss together the strawberries, blueberries, and raspberries.
Assemble the Parfaits
Spoon about 3 tablespoons of the seasoned yogurt into the bottom of each of four serving glasses or bowls.
Add a layer of mixed berries over the yogurt in each glass.
Sprinkle a generous layer of cooled granola over the berries.
Repeat the layers once more — yogurt, berries, then granola — finishing with granola on top.
Garnish and Serve
Scatter torn fresh mint leaves over each parfait and serve immediately.
