Stuffed Grape Leaves
Tender grape leaves filled with herbed rice, lemon, and pine nuts — a Mediterranean classic.
Instructions
Toast the Pine Nuts
Place a small skillet over medium-low heat and add the pine nuts.
Stir the pine nuts constantly until they are golden and fragrant, about 3 minutes, then transfer to a plate.
Sauté the Aromatics
Heat 2 tablespoons of the olive oil in a medium saucepan over medium heat.
Add the diced onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
Add the minced garlic and stir for 1 minute until fragrant.
Build the Filling
Remove the saucepan from the heat.
Add the rinsed rice, currants, toasted pine nuts, mint, and parsley to the onion mixture.
Add the allspice, cinnamon, cumin, salt, pepper, and 1 tablespoon of the lemon juice.
Stir everything together until evenly combined.
Prepare the Pot
Line the bottom of a large, wide pot or Dutch oven with the lemon rounds to prevent the grape leaves from sticking.
Roll the Grape Leaves
Place one grape leaf flat on your work surface, shiny side down, with the stem end closest to you.
Place 1 heaping teaspoon of filling near the base of the leaf.
Fold the bottom of the leaf up over the filling.
Fold in both sides of the leaf toward the center.
Roll the leaf firmly away from you into a snug cylinder.
Place the rolled leaf seam-side down in the prepared pot.
Repeat rolling with remaining leaves and filling, arranging them snugly in a single layer, then stacking a second layer if needed.
Braise the Grape Leaves
Whisk together the vegetable broth, remaining 2 tablespoons of lemon juice, and remaining 1 tablespoon of olive oil in a small bowl.
Pour the broth mixture over the rolled grape leaves in the pot.
Place a heatproof plate directly on top of the grape leaves to weigh them down and keep them from unrolling.
Bring the liquid to a boil over medium-high heat.
Reduce the heat to low and cover the pot with its lid.
Simmer for 45 to 50 minutes until the rice inside is fully cooked and tender.
Rest and Serve
Remove the pot from the heat and let the grape leaves rest, covered, for 10 minutes.
Carefully remove the plate and transfer the grape leaves to a serving platter using tongs or a slotted spoon.
Serve warm or at room temperature with fresh lemon wedges on the side.
