Brazilian Cheese Bread (Pão de Queijo)
Chewy, cheesy little rolls made with tapioca flour — naturally gluten-free and impossible to stop eating.
Instructions
Preheat the Oven
Preheat your oven to 400°F (200°C).
Prepare the Baking Sheet
Line a large baking sheet with parchment paper.
Heat the Liquids
Combine the milk, water, oil, and salt in a small saucepan.
Heat the mixture over medium heat until it just begins to simmer, then remove from heat.
Form the Dough
Place the tapioca flour in a large mixing bowl.
Pour the hot liquid mixture over the tapioca flour all at once.
Stir vigorously with a wooden spoon until a rough, shaggy dough forms.
Let the dough cool for 5 minutes until it is warm but no longer hot to the touch.
Add Eggs and Cheese
Add the eggs one at a time to the dough, mixing well after each addition.
Add both cheeses to the dough.
Mix until the cheeses are fully incorporated and the dough is smooth and slightly sticky.
Portion the Dough
Scoop the dough using a tablespoon or small cookie scoop into roughly 1.5-inch balls.
Place each ball on the prepared baking sheet, spacing them about 2 inches apart.
Bake
Bake for 18 to 22 minutes, until the rolls are puffed and golden brown on top.
Cool and Serve
Remove from the oven and let the rolls cool on the pan for 3 minutes before serving warm.
